  • 1 ½ cups buttermilk
  • 2 large eggs
  • 2–3 tablespoons oil or bacon grease
  • 1 tablespoon butter (optional)
  • 1–2 teaspoons sugar (optional)

  • Cast iron skillet
  • Mixing bowl
  • Whisk or spoon
  • Measuring cups and spoons
  • Oven mitts

Method

  1. Preheat oven to 425°F (220°C) and place the cast iron skillet inside with oil or grease.
  2. In a bowl, mix cornmeal, buttermilk, and eggs until just combined.
  3. Carefully remove hot skillet and pour in the batter—it should sizzle immediately.

  5. Let it rest for 5–10 minutes before slicing and serving.

Notes

  • Always preheat your skillet for the best crispy crust
  • Use bacon grease for authentic Southern flavor
  • Avoid overmixing to keep the texture light

  • Let cornbread rest before cutting to hold its shape
  • Adjust sweetness based on your taste preference
