Brenda Gantt Meatloaf Recipe

A classic Southern-style meatloaf inspired by Brenda Gantt. This recipe is simple, juicy, and full of comforting flavors—perfect for a cozy family dinner any day of the week.

Ingredients
  

  • 1 lb ground beef (80/20 preferred)
  • 1 cup breadcrumbs or crushed crackers
  • 2 eggs
  • 1 small onion (finely chopped)
  • ½ cup milk
  • ½ cup ketchup (plus extra for topping)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp Worcestershire sauce (optional)
  • 2 cloves garlic (optional, minced)

Equipment

  • Large mixing bowl
  • Fork or spatula
  • Knife & cutting board
  • Loaf pan or baking dish
  • Measuring cups/spoons
  • Meat thermometer (recommended)

Method
 

  1. Preheat oven to 175°C (350°F) and lightly grease a baking dish.
  2. In a bowl, mix the following ingredients: beef, breadcrumbs, eggs, milk, onion, and seasonings.
  3. Shape the loaf and place it in your baking dish or loaf pan.
  4. Add topping by spreading ketchup evenly over the top.
  5. Bake for 55–60 minutes until fully cooked.
  6. Check doneness (internal temp should be 70°C / 160°F).
  7. Rest the meatloaf for at least 10 minutes before serving.

Notes

  • Don’t overmix the meat—this keeps the texture soft and tender.
  • You can swap beef with turkey for a lighter version.

  • Add a glaze halfway through baking for extra flavor.
  • Leftovers taste even better the next day—perfect for sandwiches!
