Ingredients
  

  • 4 cups yellow squash, sliced
  • 1 medium onion, chopped
  • 1 cup shredded cheddar cheese
  • ½ cup mayonnaise or sour cream
  • 1 egg, lightly beaten
  • 1 cup crushed buttery crackers (like Ritz)
  • 2 tbsp melted butter
  • Salt and black pepper to taste

Method
 

  1. Preheat oven to 350°F (175°C). Grease a casserole dish with butter.
  2. Cook squash & onions together until tender, then drain excess water.
  3. Mix filling: In a large bowl, combine squash, onions, cheese, mayonnaise, egg, salt, and pepper. Stir gently.
  4. Layer the mixture evenly in the casserole dish.
  5. Prepare topping: Mix crushed crackers with melted butter, then sprinkle over the casserole.
  6. Now bake for at leat 25–30 minutes until you get the golden brownish bubbly texture.
  7. Cool slightly before serving for best texture.

Notes

  • For extra flavor, mix in a pinch of garlic powder or cayenne pepper.
  • You can try pepper jack instead of chedder for a spicy twist.

  • Add a sprinkle of parsley or paprika on top for a beautiful garnish.
  • Best served warm with roast chicken, BBQ, or cornbread!
