Ingredients
  

  • 1 small head cabbage, chopped
  • 1 large carrots, peeled and diced
  • 3 celery stalks, chopped
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 cup water (optional for thinning)
  • 1 tsp olive oil (optional)
  • 1 tsp Italian seasoning
  • Salt & pepper to taste
  • ¼ tsp red pepper flakes (optional)
  • 1-2 tbsp apple cider vinegar or lemon juice (optional)

Method
 

  1. Heat olive oil in a large pot. Sauté onions, carrots, and celery for 5 minutes.
  2. Add garlic and seasonings. Cook for 1 minute.
  3. Add cabbage, tomatoes, broth, and water. Stir well.
  4. Boil the mixture & reduce the heat & simmer it gently.
  5. Add vinegar or lemon juice. Taste and adjust seasoning.
  6. Serve warm. Store leftovers in fridge or freezer.

Notes

  • Add beans, tofu, or shredded chicken for protein.
  • Use red cabbage for a colorful twist.

  • Freeze leftovers in individual containers for easy grab-and-go meals.
