CAVA Grilled Chicken Recipe

Ingredients
  

  • 2 lbs boneless, chicken breasts or thighs
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 4 garlic cloves, minced
  • 1 tsp oregano
  • 1 tsp paprika
  • ½ tsp cumin
  • ½ tsp coriander
  • Salt and black pepper to taste
  • Optional: 2 tbsp Greek yogurt

Method
 

  1. Step 1: Make the Marinade: Mix olive oil, lemon juice, garlic, and spices in a bowl.
  2. Step 2: Marinate the Chicken: Coat chicken well. Refrigerate for at least 30 minutes. Overnight gives best flavor.
  3. Step 3: Preheat Grill: Heat grill to medium-high. Lightly oil the surface.
  4. Step 4: Grill: Cook chicken 5 to 7 minutes per side until internal temperature reaches 165°F.
  5. Step 5: Rest and Slice: Let it rest for 5 minutes. Slice into thin strips.

Notes

  • Marinate longer for a deeper flavor; 8 to 24 hours works best
  • Chicken thighs stay juicier than breasts
  • Do not skip resting, it keeps the meat tender

  • Add yogurt to marinade for extra softness
  • Slice against the grain for better texture
  • Works great for meal prep up to 4 days
