- Wash and dry the kale and cabbage. Chop kale finely and slice cabbage thin.
- Place kale in a large bowl, sprinkle with a pinch of salt, and massage for 30–60 seconds until softened.
- In a small bowl, whisk together apple cider vinegar, Dijon mustard, honey, olive oil, and salt.
- Add cabbage, almonds, and dried cherries to the kale.
- Pour the dressing & toss it gently to coat evenly.
- Rest the salad for at least 10 minutes, before you serve.
