Ingredients
  

🥬 Salad
  • 2 cups curly kale, finely chopped (stems removed)
  • 1 cup green cabbage, thinly sliced
  • ¼ cup roasted salted almonds, chopped
  • ¼ cup dried cherries
🍎 Apple Dijon Dressing
  • 2 tablespoons apple cider vinegar
  • 1 tablespoons Dijon mustard
  • 2 tablespoons olive oil
  • tablespoons honey (or maple syrup)
  • ¼ teaspoon salt

Equipment

  • Chef’s knife
  • Cutting board
  • Large mixing bowl
  • Small bowl (for dressing)
  • Whisk or fork
  • Measuring cups/spoons
  • Salad tongs or clean hands

Method
 

  1. Wash and dry the kale and cabbage. Chop kale finely and slice cabbage thin.
  2. Place kale in a large bowl, sprinkle with a pinch of salt, and massage for 30–60 seconds until softened.
  3. In a small bowl, whisk together apple cider vinegar, Dijon mustard, honey, olive oil, and salt.
  4. Add cabbage, almonds, and dried cherries to the kale.
  5. Pour the dressing & toss it gently to coat evenly.
  6. Rest the salad for at least 10 minutes, before you serve.

Notes

  • Massaging the kale is key for tender texture
  • Chop ingredients small for true Chick-fil-A style

  • Keep this salad in an airtight container for up to 2 days
  • Add grilled chicken to make the complete meal
