Creamy Mushroom and Asparagus Chicken Penne

Ingredients
  

  • 2 cups penne pasta
  • 2 chicken breasts, diced
  • 1 cup mushrooms, sliced
  • 1 cup asparagus, chopped
  • 2 tbsp olive oil
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 garlic cloves, minced
  • Salt & pepper to taste
  • Fresh parsley, chopped (for garnish)

Equipment

  • Large skillet or frying pan
  • Saucepan for pasta
  • Wooden spoon or spatula
  • Knife & chopping board
  • Measuring cups/spoons

Method
 

  1. Cook penne pasta as per package instructions; drain and set aside.
  2. Now, take a skillet, heat olive oil & sauté garlic.
  3. Add chicken, cook until lightly browned.
  4. Add mushrooms & asparagus; cook 5 minutes.
  5. Pour in heavy cream, stir in Parmesan, simmer until thickened.
  6. Toss in cooked penne, season with salt & pepper.
  7. Garnish with parsley & serve hot.

Notes

  • Substitute chicken with tofu for a vegetarian version.
  • Use gluten-free pasta if preferred.
  • To enhance the flavors, Add white wine to the sauce.
