Ingredients
  

For Cookie Butter Syrup:
  • 2 tbsp cookie butter (e.g., Biscoff)
  • 1 tbsp brown sugar
  • 2 tbsp milk or cream
  • ½ tsp vanilla extract (optional)
For Cold Brew Base:
  • cups cold brew coffee
  • Ice cubes
For Cookie Butter Cold Foam:
  • ¼ cup heavy cream
  • 1 tbsp cookie butter
  • 1 tsp brown sugar
  • ¼ tsp pumpkin spice or cinnamon
Optional Toppings:
  • Crushed Biscoff cookies
  • Whipped cream
  • Cinnamon sugar

Equipment

  • French press or cold brew maker
  • Small saucepan
  • Hand frother or electric whisk
  • Measuring spoons & cups
  • Tall serving glass + straw

Method
 

Make Cookie Butter Syrup:
  1. Heat the following in a saucepan on medium-low flame, cookie butter with brown sugar & &. Stir until smooth and combined. Set aside to cool.
Prepare Cold Foam:
  1. In a chilled cup, whisk cream, cookie butter, brown sugar, and spice until thick and frothy (soft peaks).
Assemble the Drink:
  1. Fill a tall glass with ice. Add cold brew, then stir in 1–2 tbsp syrup. Spoon cookie butter cold foam on top.
Finish & Serve:
  1. You can also garnish with crushed cookies or cinnamon sugar & serve immediately with a straw and enjoy!

Notes

  • For dairy-free? You can use oat milk or coconut cream
  • Froth cream when cold for best texture

  • Adjust syrup quantity based on sweetness preference
  • Cold brew concentrate will give a stronger flavor—dilute as needed
