First, Preheat your oven to 300°F (150°C) and prepare the baking sheet.
Blend cottage cheese until smooth; set aside.
Separate eggs into two bowls.
Now, Whip the egg whites until you get stiff peaks & salt to taste.
Now, take a yolk bowl & mix the following: cottage cheese, cornstarch, sweetener & vanilla.
Gently fold whipped egg whites into yolk mixture in 3 additions, keeping as much air as possible.
Scoop batter onto prepared baking sheet in even rounds.
Now, Bake for at least 25 minutes or until you get the golden brownish and perfectly set fluffy bread.
Cool it for 5 minutes before serving and enjoy!
