Golden Corral Meatloaf Recipe

This copycat recipe brings buffet-style comfort food straight to your dinner table using simple pantry ingredients. A soft and juicy meatloaf dish perfectly topped with flavorful glossy glaze.

Ingredients
  

For the Meatloaf:
  • 2 lbs ground beef (80/20)
  • 1 cup breadcrumbs or crushed crackers
  • 2 large eggs
  • ¾ cup milk
  • 1 small onion, finely chopped
  • 1 tsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
For the Glaze:
  • ¾ cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp yellow mustard

Equipment

  • Large mixing bowl
  • Measuring cups/spoons
  • Loaf pan or shallow baking dish
  • Small bowl (for glaze)
  • Spatula or spoon
  • Oven

Method
 

  1. Prepare your oven to 350°F (175°C) & greased loaf pan.
  2. In a bowl, add mix all meatloaf ingredients until perfectly combined.
  3. Shape the mixture in a loaf & place it gently on the baking pan.
  4. Mix glaze ingredients and spread half over the meatloaf.
  5. Bake uncovered for 45 minutes, then add remaining glaze.
  6. Bake another 15 minutes, rest for 10 minutes, slice, and serve.

Notes

  • Don’t overmix the meat—gentle mixing keeps it tender
  • Milk is key for a soft, buffet-style texture
  • Resting the meatloaf prevents it from falling apart
