Ground Turkey Sweet Potato Casserole

Ingredients
  

  • 1 lb ground turkey (lean, 93/7 recommended)
  • 3 medium sweet potatoes (about 2 lbs, peeled & cubed)
  • 1 medium onion (diced)
  • 2 garlic cloves (minced)
  • 1 red bell pepper (chopped)
  • 1 cup baby spinach (optional, chopped)
  • 1 cup shredded cheese (mozzarella or cheddar)
  • ½ cup milk (or dairy-free alternative)
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried oregano
  • Salt & black pepper to taste

Equipment

  • Large skillet (for browning turkey)
  • 9x13 inch casserole dish
  • Cutting board & sharp knife
  • Mixing bowls
  • Spatula or wooden spoon
  • Measuring cups/spoons
  • Potato masher or fork

Method
 

  1. Preheat oven to 375°F (190°C). Grease casserole dish.
  2. In a skillet, heat oil and sauté onion, garlic, and bell pepper until softened.
  3. Add ground turkey, season with paprika, oregano, salt, and pepper. Cook until browned.
  4. Meanwhile, boil sweet potatoes until fork-tender, then mash with milk, olive oil, and a pinch of salt.
  5. Layer cooked turkey mixture into the casserole dish, top with spinach, then spread sweet potato mash evenly on top.
  6. Garnish with cheese & bake for atleat 20-25 minutes, until you get the light golden & bubbly texture.
  7. Let rest 5 minutes before serving.

Notes

  • You can try chicken, beef, or vegetarian crumbles in place of ground turkey.
  • You can also try veggies such as zucchini, broccoli, or peas.
  • Try vegan cheese and milk for a dairy-free option.
