Ingredients

  • 1 lb Cajun pork boudin, casing removed
  • 1 cup cooked rice (optional for extra structure)
  • 1 cup shredded cheddar cheese
  • 1 cup Hot Cheetos crumbs
  • 2 large eggs
  • 1 cup all-purpose flour
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Oil for frying

Equipment

  • Mixing bowls
  • Food processor or blender (to crush Cheetos)
  • Frying pan or deep fryer
  • Baking sheet
  • Parchment paper
  • Slotted spoon
  • Thermometer (optional but helpful)

Method

  1. Remove boudin from casing and add to a bowl with rice, cheese, and seasonings. Mix well.
  2. Roll the mixture into 1–1.5-inch balls.
  3. Place on a tray and chill for 30 minutes to firm up.
  4. Prepare three bowls: flour, beaten eggs, and crushed Hot Cheetos.
  5. Roll each ball in flour → egg → Cheetos crumbs.
  6. Heat oil to 350°F (175°C).
  7. Fry boudin balls for 2–3 minutes until crisp and bright red.
  8. Drain on a wire rack or paper towels and serve warm.

Notes

  • Double-coat with Hot Cheetos crumbs for extra crunch.
  • Air-frying works great—just spray lightly with oil.
  • For less heat, mix Hot Cheetos with regular Cheetos crumbs.

  • You can freeze the balls before frying for easy make-ahead snacks.
  • Serve with ranch, spicy mayo, chipotle aioli, or queso for the best flavor.
