Instructions:
- First mix oats, coconut, and set aside.
- In a saucepan, boil the following mixture for at least 1-2 minutes, combining melted butter with sugar, milk, lemon juice, and zest.
- Remove from heat, add vanilla.
- Mix with the oat mixture and stir it well until combined.
- Scoop onto parchment-lined tray and flatten slightly.
Notes
- Use gluten-free oats for a GF version.
- For a strong citrus & lemon taste, add lemon extract.
- You can in an air-tight container in the fridge for up to 1 week.
- Great for kids to help with—no baking required!
