  • cups quick oats
  • ½ cup shredded coconut (optional)
  • cup butter
  • ½ cup granulated sugar
  • ¼ cup milk
  • 2 tbsp lemon juice (fresh)
  • 1 tbsp lemon zest
  • ½ tsp vanilla extract
  • Pinch of salt

Method
 

Instructions:
  1. First mix oats, coconut, and set aside.
  2. In a saucepan, boil the following mixture for at least 1-2 minutes, combining melted butter with sugar, milk, lemon juice, and zest.
  3. Remove from heat, add vanilla.
  4. Mix with the oat mixture and stir it well until combined.
  5. Scoop onto parchment-lined tray and flatten slightly.

Notes

  • Use gluten-free oats for a GF version.
  • For a strong citrus & lemon taste, add lemon extract.
  • You can in an air-tight container in the fridge for up to 1 week.
