Ingredients
  

  • 2 large chicken breasts
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 3 tbsp butter
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt & black pepper
  • 1 tbsp chopped parsley
  • Optional: Parmesan cheese, chili flakes

Method
 

  1. Pound chicken to even thickness and season lightly.
  2. Mix the following ingredients: olive oil, garlic, lemon juice, paprika, salt & pepper.
  3. Marinate chicken 30 minutes.
  4. Heat skillet and cook chicken 5–6 minutes per side until done.
  5. Melt butter with garlic and lemon zest in same pan.
  6. Spoon sauce over chicken and cook 1 minute.
  7. Rest chicken 5 minutes, garnish with parsley, and serve hot.

Notes

  • Use fresh lemon for the best taste.
  • Don’t overcook chicken—165°F is perfect.

  • Add cream for a creamy version.
  • Chicken thighs work great, too.
  • Great for meal prep and sandwiches the next day.
