McAlister’s Broccoli Cheddar Soup Recipe

Ingredients
  

  • 4 cups fresh broccoli florets
  • 1 small onion, finely chopped
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 2 cups chicken or vegetable broth
  • 2 cups whole milk or half-and-half
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • Salt & pepper to taste

Equipment

  • Large soup pot
  • Wooden spoon
  • Whisk
  • Cutting board & knife
  • Ladle

Method
 

  1. Melt butter in a large pot, add onion, and sauté until soft.
  2. Now you can stir in flour & whisk gently to make a soft & smooth roux.
  3. Slowly add broth, milk, and cream while whisking.
  4. Add broccoli and simmer until tender (10–12 minutes).
  5. Reduce the heat, stir in cheddar cheese until melted.
  6. Season with salt and pepper. Serve warm!

Notes

  • For a thicker soup, add a bit more flour or simmer for a longer period.
  • For a vegetarian version, use veggie broth.
  • You can also add a pinch of nutmeg or cayenne for an enhanced flavor!
