Mediterranean Ground Beef Stir Fry

Ingredients
  

  • 1 lb (450g) ground beef (lean preferred)
  • 2 tbsp olive oil
  • 1 medium zucchini, chopped
  • 1 red bell pepper, sliced
  • 1 small red onion, diced
  • 2 garlic cloves, minced
  • 1 cup cherry tomatoes, halved
  • 1 tsp oregano
  • 1 tsp paprika
  • ½ tsp cumin
  • Salt & black pepper (to taste)
  • 2 tbsp fresh parsley or cilantro, chopped
  • ½ cup crumbled feta cheese (optional)
  • Lemon wedges for serving

Equipment

  • Large skillet or wok
  • Wooden spoon or spatula

Method
 

  1. First, heat the olive oil in a large skillet on medium-high flame.
  2. Now, Add the ground beef and cook until you get the brownish texture, break into the small chuncks.
  3. Stir in garlic, onion, bell pepper, and zucchini. Cook for 5–6 minutes until vegetables are tender-crisp.
  4. Now, add the following ingredients: cherry tomatoes, oregano, paprika, cumin, salt, pepper. Stir and cook for 2–3 minutes.
  5. Turn off heat, sprinkle with parsley and feta cheese.
  6. Serve warm with lemon wedges, rice, or flatbread.

Notes

  • You can try ground turkey or chicken instead of ground beef.
  • Add spinach or kale for an extra boost of greens.

  • You can also try goat cheese in place of feta to keep it dairy-free.
  • Pairs well with couscous, quinoa, or pita.
