- First, heat the olive oil in a large skillet on medium-high flame.
- Now, Add the ground beef and cook until you get the brownish texture, break into the small chuncks.
- Stir in garlic, onion, bell pepper, and zucchini. Cook for 5–6 minutes until vegetables are tender-crisp.
- Now, add the following ingredients: cherry tomatoes, oregano, paprika, cumin, salt, pepper. Stir and cook for 2–3 minutes.
- Turn off heat, sprinkle with parsley and feta cheese.
- Serve warm with lemon wedges, rice, or flatbread.
Notes
- You can try ground turkey or chicken instead of ground beef.
- Add spinach or kale for an extra boost of greens.
- You can also try goat cheese in place of feta to keep it dairy-free.
- Pairs well with couscous, quinoa, or pita.
