Ingredients
  

  • 2 tbsp olive oil
  • 1 Medium Size Onion (chopped)
  • 1 Cup bell peppers (mixed, diced)
  • ½ Cup mushrooms (sliced)
  • 3 cloves garlic (minced)
  • 1 can (400g) Crushed tomatoes
  • 2 tbsp Tomato paste
  • 1 tbsp Dried basil
  • 1 tbsp Dried oregano
  • ½ tbsp Red pepper flakes
  • 1 Salt & pepper to taste
  • 1 Fresh parsley (optional garnish)

Equipment

  • 1 Large saucepan or deep skillet
  • 1 Wooden spoon
  • 1 Cutting board & knife
  • 1 Measuring cups/spoons

Method
 

  1. Heat olive oil in a saucepan.
  2. Now Simmer it well, onions, garlic & bell peppers until mild paste.
  3. Add mushrooms and cook for 3–4 minutes.
  4. Stir in crushed tomatoes and tomato paste.
  5. Garnish with herbs, red pepper flakes, salt & pepper.
  6. Simmer uncovered for 15–20 minutes, stirring occasionally.
  7. Rest at least for 5 minutes, garnish with chopped parsley, and basil.

Notes

  • Adjust the spice by increasing or decreasing red pepper flakes.
  • Add cooked sausage or ground beef for a meat version.
  • For a creamy version, stir in 2 tbsp cream or coconut milk at the end.
  • Freezes well for up to 3 months.
