Method
- Heat olive oil in a saucepan.
- Now Simmer it well, onions, garlic & bell peppers until mild paste.
- Add mushrooms and cook for 3–4 minutes.
- Stir in crushed tomatoes and tomato paste.
- Garnish with herbs, red pepper flakes, salt & pepper.
- Simmer uncovered for 15–20 minutes, stirring occasionally.
- Rest at least for 5 minutes, garnish with chopped parsley, and basil.
Notes
- Adjust the spice by increasing or decreasing red pepper flakes.
- Add cooked sausage or ground beef for a meat version.
- For a creamy version, stir in 2 tbsp cream or coconut milk at the end.
- Freezes well for up to 3 months.
