Ingredients
  

For the Braised Beef:
  • 1 lb beef chuck roast
  • 2 cups beef broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon Italian seasoning
For the Pasta:
  • 1 package cheese tortellini (about 16 oz)
For the Cream Sauce:
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 tablespoon butter
  • ½ teaspoon chili flakes (optional)
For Garnish:
  • Fresh parsley, chopped
  • Extra grated Parmesan cheese

Method
 

  1. Prepare the Beef: Season the beef with salt, pepper & Italian seasoning. let it rest for few minutes.
  2. Sear the Beef: Heat the olive oil in a Dutch over or in a skillet on a medium flame. Sear the beef on both sides until a golden crust forms. This step builds deep flavor.
  3. Braise the Beef: Add beef broth, cover the pot, and simmer on low heat for about 1.5–2 hours until the beef becomes tender. Remove and shred the meat with forks.
  4. Make the Cream Sauce: In a skillet, melt butter and sauté garlic for about 1 minute. Add heavy cream and simmer gently. Add & stir in Parmesan cheese until smooth.
  5. Combine Everything: Add the cooked tortellini and shredded beef to the sauce. Toss gently so the pasta gets fully coated.
  6. Garnish and Serve: Top with chopped parsley and extra Parmesan cheese. Serve warm for the best flavor.

Notes

  • Slow braising is important for tender beef. Avoid rushing this step.
  • Cook tortellini until just tender, not overly soft.
  • Add Parmesan slowly to prevent clumping in the sauce.

  • If the sauce becomes thick, add a splash of pasta water or milk.
  • Garnish just before serving to keep the dish fresh and colorful.
