Publix Calypso Cookies Recipe

Soft, bakery-style Publix Calypso Cookies loaded with rich chocolate chunks and a hint of coconut. These cookies are chewy in the center, lightly crisp on the edges, and taste just like the ones from the Publix bakery—fresh from your own oven.

Ingredients
  

  • 2 cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup unsalted butter, softened
  • ¾ cup brown sugar
  • ¼ cup white sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup chocolate chunks
  • ¾ cup sweetened shredded coconut

Equipment

  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C)
  2. Prepare baking sheet with parchment paper.
  3. Whisk butter, brown sugar, and white sugar until fluffy.
  4. Add eggs one at a time, stir in vanilla extract and mix gently
  5. Take another bowl, add and whisk flour, baking soda, and salt.
  6. Add dry ingredients in it & mix, avoid overmixing
  7. Gently fold in chocolate chunks and shredded coconut.
  8. Scoop dough onto the baking sheet, leaving space between cookies.
  9. Bake for 12–14 minutes, until edges are set and centers look soft.
  10. Cool for at least 10 minutes, then place it to a cooling rack.

Notes

  • Chill the dough for 30 minutes before baking
  • Slightly underbake for soft, bakery-style centers

  • Chocolate chunks create a better texture than small chips
  • Cookies firm up as they cool, so don’t overbake
