Ingredients
  

  • ½ cup extra virgin olive oil
  • ¼ cup red wine vinegar
  • ¼ cup freshly grated Parmesan cheese
  • 1 clove garlic, finely minced
  • 1 tsp Dijon mustard
  • 1 tsp dried Italian herb blend
  • ½ tsp onion powder
  • ½ tsp honey
  • ¼ tsp cracked black pepper
  • ½ tsp salt
  • 1 tsp fresh lemon juice (optional)

Equipment

  • Medium mixing bowl
  • Whisk or fork
  • Microplane or fine grater
  • Measuring cups and spoons

Method
 

  1. Whisk together vinegar, Dijon, garlic, herbs, onion powder, honey, salt, and pepper.
  2. Slowly drizzle in olive oil while whisking constantly until emulsified.
  3. Fold in freshly grated Parmesan until fully incorporated.
  4. Taste and adjust seasoning as needed.
  5. Transfer to a glass jar and refrigerate for 30 minutes before serving.

Notes

  • Always use freshly grated Parmesan for the smoothest texture.
  • Whisk or shake the jar before every use — separation is completely normal.

  • Add 1 egg yolk before the olive oil for a creamier, richer version closer to Subway's bottled Creamy Italian MVP sauce.
  • Stores well in the refrigerator for up to 7 days in a sealed glass jar.
