  • 3 tbsp soy sauce
  • 2 tbsp brown sugar
  • 1 tbsp honey
  • 2 cloves garlic (minced)
  • 1 tsp fresh ginger (grated)
  • 1 tbsp cornstarch
  • ½ cup water
  • 1 tsp sesame oil (optional)
For Sweet Onion Sauce:
  • ½ cup sugar
  • ¼ cup white vinegar
  • 1 tbsp soy sauce
  • 1 tsp onion powder
  • 1 tsp Dijon mustard
  • ½ cup water
  • 1 tbsp cornstarch
For Sandwich Assembly:
  • 4 hoagie rolls or Subway-style sandwich bread
  • 1 cup shredded lettuce
  • 1 tomato (sliced)
  • ½ cucumber (sliced)
  • ½ red onion (thinly sliced)
  • ½ cup shredded cheese (optional)
  • Extra sweet onion sauce for drizzling

Equipment

  • Large skillet or frying pan
  • Small saucepan
  • Mixing bowls
  • Whisk
  • Knife and cutting board
  • Measuring cups and spoons
  • Spatula or wooden spoon
  • Tongs
  • Sandwich knife

Method

  1. Step 1 – Prepare the Marinade: Properly mix the following ingredients in the bowl: soy sauce, brown sugar, honey, garlic, and ginger. Add the chicken strips and let them sit for about 10–15 minutes to absorb the flavor.
  2. Step 2 – Cook the Chicken: Cook the marinated chicken strips in a skillet with a little oil until brownish & perfectly cooked.
  3. Step 3 – Make the Sweet Onion Sauce: In a saucepan combine sugar, vinegar, soy sauce, onion powder, mustard, and water. Simmer the mixture and add cornstarch slurry. Stir until the sauce thickens.
  4. Step 4 – Coat the Chicken: Add a few tablespoons of sweet onion sauce to the cooked chicken. Toss & combine everything until the perfectly coated chicken.
  5. Step 5 – Assemble the Sandwich: Slice the bread and add the teriyaki chicken. Top with lettuce, tomatoes, cucumbers, onions, and cheese if desired.
  6. Step 6 – Serve: Drizzle extra sweet onion sauce on top, close the sandwich, and serve warm.

Notes

  • Slice the chicken thin to mimic the Subway-style texture.
  • Let the sauce simmer slowly so it thickens properly.
  • Toast the bread lightly for a more authentic sandwich experience.

  • Add extra vegetables if you want more crunch and freshness.
  • The chicken can also be served as a rice bowl or salad topping.
