Ingredients
  

  • ¾ cup raw or roasted cashews
  • 2 tbsp chili paste (sriracha or sambal oelek)
  • 1 tbsp toasted sesame oil
  • 1 tbsp fresh ginger, chopped
  • 1 clove garlic
  • 2 tbsp lime juice
  • tbsp soy sauce or tamari
  • 1 tbsp rice vinegar
  • 1 tbsp maple syrup
  • ¼ cup fresh cilantro
  • Water, as needed

Method
 

  1. Add cashews, chili paste, sesame oil, ginger, garlic, lime juice, soy sauce, rice vinegar, and maple syrup to a blender
  2. Blend on high for 1 to 2 minutes until mostly smooth
  3. Add cilantro and pulse briefly to combine
  4. Thin with water, one tablespoon at a time, to desired consistency
  5. Taste and adjust spice or salt as needed

Notes

  • Store in an airtight jar in the fridge for 1 to 2 weeks.
  • Stir well before each use since natural separation is normal.
  • Not recommended for freezing, as the texture turns grainy once thawed.
