Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice (fresh preferred)
  • ½ cup soy sauce
  • ¼ cup brown sugar
  • 2 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tbsp cornstarch + 2 tbsp water (slurry)
  • Grilled pineapple slices, for garnish
  • Fresh cilantro, chopped (optional)

Equipment

  • Grill pan or outdoor grill
  • Medium saucepan
  • Mixing bowls
  • Basting brush

  • Cutting board & sharp knife

Method
 

  1. Take a saucepan and combine the following ingredients: pineapple juice, soy sauce, brown sugar, rice vinegar, garlic, and ginger & simmer it gently!
  2. Stir in cornstarch slurry and cook until thickened into a glaze. Set aside.
  3. Preheat grill or grill pan over medium-high heat.
  4. Season chicken lightly with salt and pepper. Grill 5–6 minutes per side, basting with glaze.
  5. Serve topped with grilled pineapple slices and extra glaze. Garnish with cilantro if desired.

Notes

  • Marinate the chicken for a deeper flavor.
  • Use chicken thighs for extra juiciness.
  • Pair with coconut rice, roasted veggies, or Hawaiian macaroni salad for a complete meal.
